Quick gazpacho

Ingredients

  • Passata· 250g
  • Red Pepper· 1 chopped
  • Red Chilli· 1 chopped
  • Garlic· 1 clove peeled crushed
  • Sherry vinegar· 1 teaspoon
  • Lime· Juice of 1/2

Instructions

step 1 In a blender (or with a stick blender), whizz together the passata, red pepper, chilli, garlic, sherry vinegar and lime juice until smooth. Season to taste, then serve with ice cubes
